How to freeze cooked food: portions, labels and organization

Before food goes into the freezer

Divide cooked food into portions that match a real serving. Clean, intact containers with lids protect food and keep you from opening a whole batch when you need one portion.

Do not leave perishable food at room temperature for prolonged periods. Organize storage promptly and follow specific recipe, manufacturer and health-authority guidance.

  • Use containers suited to their intended use.
  • Leave appropriate space when food may expand.
  • Keep cooked food separate from raw or partially prepared food.

Label every portion

Brazilian Anvisa guidance recommends identifying prepared food stored in a fridge or freezer. At home, the food name and date already prevent an anonymous container weeks later.

Keep earlier food visible

Thaw without improvising

The official guidance reviewed recommends thawing under refrigeration below 5 °C, or in a microwave when food will be prepared or eaten immediately. Do not thaw food on a room-temperature counter.

Thawed food should remain refrigerated if it is not used immediately and should not be refrozen. Reheat frozen or refrigerated preparations thoroughly when applicable.

If time, temperature, appearance, smell or storage conditions are uncertain, follow the applicable official guidance and discard the food. This guide cannot assess safety remotely.
